Baked Spinach-Artichoke Dip Recipe
This is a great appetizer to serve with almost anything. You can eat it with crackers, pita wedges, chips or even toasted bread pieces. It gets eaten fast because everyone loves it!!

Ingredients
  • 1/2 Cup shredded Mozzarella cheese
  • 1/2 cup fat free sour cream
  • 1/2 cup fat free mayonnaise
  • 2 tsp. Dijon-style mustard
  • 1 14 oz. can artichoke hearts, drained & coarsely chopped
  • 1 cup loosely packed, coarsely chopped spinach leaves
  • 1/2 cup finely chopped red onion (1 medium)
  • 1/4 cup Parmesan Cheese

Directions
  1. In a large bowl combine mozzarella cheese, sour cream,
  2. mayonnaise and mustard. Stir in artichoke hearts, spinach
  3. and onion, spread mixture evenly into a 9 inch pie plate.
  4. Sprinkle with parmesan cheese.
  5. Bake uncovered in a 350 degree oven about 15 minutes
  6. or until heated through. Serve w/pita wedges or wheat crackers.
  7. Make ahead directions: Prepare as above through step 1.
  8. Cover and chill for up to 24 hours. Uncover and bake about
  9. 25 minutes or until heated through.
