Guacamole Ancho Burgers Recipe
GUACAMOLE ANCHO BURGERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mason Estate in Fate, Texas in 1991.

Ingredients
  • 8 strips bacon
  • Guacamole
  • 3 dried ancho chilies
  • 2 tablespoons oil
  • 1 small red onion minced
  • 3 tablespoons minced garlic
  • 4 green onions green parts only minced
  • 1 teaspoon salt
  • 1-1/2 pounds ground round
  • 4 flour tortillas

Directions
  1. Cook bacon until crisp then drain on paper towels and set aside.
  2. Make guacamole and refrigerate until ready to use.
  3. Soak chilies in boiling water to cover for about 2 hours.
  4. When soft remove stems and seeds then coarsely chop and sauté in skillet in 1 tablespoon oil with onion, garlic and green onion tops until onions soften then stir in salt.
  5. Puree 1/4 cup of the chile mixture with 1/4 cup water in food processor or blender drizzling in more water if necessary until mixture is the consistency of ketchup.
  6. Transfer remaining chile mixture to a bowl to cool.
  7. When cool add ground beef and gently mix until combined.
  8. Shape into 4 burgers.
  9. Heat a cast-iron skillet over high heat until very hot.
  10. Add 1 tablespoon oil and tilt to spread evenly over bottom of pan.
  11. Cook burgers uncovered for 5 minutes then turn and cook 4 minutes longer.
  12. Serve each burger on a flour tortilla topped with guacamole, 2 strips of bacon and 2 tablespoons of the pureed chili mixture.
