Guacamole Ancho Burgers

- 8 strips bacon shopping list
- guacamole shopping list
- 3 dried ancho chilies shopping list
- 2 tablespoons oil shopping list
- 1 small red onion minced shopping list
- 3 tablespoons minced garlic shopping list
- 4 green onions green parts only minced shopping list
- 1 teaspoon salt shopping list
- 1-1/2 pounds ground round shopping list
- 4 flour tortillas shopping list
How to make it
- Cook bacon until crisp then drain on paper towels and set aside.
- Make guacamole and refrigerate until ready to use.
- Soak chilies in boiling water to cover for about 2 hours.
- When soft remove stems and seeds then coarsely chop and sauté in skillet in 1 tablespoon oil with onion, garlic and green onion tops until onions soften then stir in salt.
- Puree 1/4 cup of the chile mixture with 1/4 cup water in food processor or blender drizzling in more water if necessary until mixture is the consistency of ketchup.
- Transfer remaining chile mixture to a bowl to cool.
- When cool add ground beef and gently mix until combined.
- Shape into 4 burgers.
- Heat a cast-iron skillet over high heat until very hot.
- Add 1 tablespoon oil and tilt to spread evenly over bottom of pan.
- Cook burgers uncovered for 5 minutes then turn and cook 4 minutes longer.
- Serve each burger on a flour tortilla topped with guacamole, 2 strips of bacon and 2 tablespoons of the pureed chili mixture.
