Oh, this is SO useful. For the past few years, I've used olive oil rather than butter in almost everything, but the proportions have largely been a matter of trial and error.

I recently came across this chart in a magazine and it's wonderful. You might doubt that you need to use butter or canola or other oils, but I've even used extra virgin olive oil for cupcakes and they turn out beautifully. Much healthier eating!
