Ingredients
  • 3 pieces cod, cooked and cooled and shredded into bite-size pieces (make sure to remove bones and skin)
  • 1-2 onion, chopped finely
  • 2 garlic cloves, chopped finely
  • 4 tablespoons good quality extra virgin olive oil
  • salt and pepper
  • fresh parsley, chopped finely
  • 3 eggs, beaten
  • lemons, sliced into round pieces

Directions
  1. Fry chopped onion and garlic in oil.
  2. When cooked, add shredded, cooled, cod fish.
  3. Fry for about 5-6 minutes.
  4. Add beaten eggs, salt and pepper to taste.
  5. Cook until eggs are cooked.
  6. Place on a platter and sprinkle parsley over top.
  7. Use lemon pieces as a garnish- may also squeeze lemon juice from pieces on individual servings- up to you.

I WISH I LIKED FISH. MY HUSBAND AND I HAVE TRIED SOOO MANY TIMES. IT IS TO GOOD FOR YOU. THE INGREDIENTS SOUND GOOD....BUT MAYBE ON .....CHICKEN???LOL


My husband hated fish, being an islander I eat lots of stuff from the sea, he actualy eats it. Never tried it with chicken, but have with beef chops. If you try it let me know how it turns out. Happy Cooking!!!
