Shredded Apple Slaw Recipe
In my quest for eating healthy and loving salads but disliking winter tomatoes, I was happy to find this recipe. I added dried cranberries and walnuts to kick it up a notch!

Ingredients
  • Dressing---2 T. white vinegar
  • 1 T. sugar
  • 1 1/2 t. canola oil
  • 1 1/2 t. water
  • 1/4 t. salt
  • 1/4 t. black pepper
  • Salad: 1 Granny smith apple chopped
  • 3 cups of finely shredded red cabbage---could use the green --I just prefer the red, chopped, right from the bag
  • ** I also added. 1c. of chopped walnuts and dried cranberries

Directions
  1. Prepare dressing in a small bowl, stir well with a whisk. Set aside.
  2. Combine shredded apple and cabbage in a large bowl. Add vinagrette, and toss gently to coat.

I think this sounds great. Especialy(geez I used to remember how to spell) that I can make it in the winter. The produce in Minnesota in the winter is slim pickings. Thanks for the great recipe. L.
