Fragran Meatball Stew Madiera Recipe
An easy but fragrant and sophisticated stew made with commercial meatballs. Use the chipotles to make it quite spicy, or forego them for the kids.

Ingredients
  • 2 lbs. your favorite commercial meatballs (Trader Joe’s makes a good product).
  • 1 large onion, chopped
  • 6 stalks celery, chopped
  • ½ lb. baby carrots
  • 1 bunch fresh basil, chopped
  • 2 T. dried oregano
  • 1 T. crushed garlic
  • 1 28 oz can tomatoes, drained, coarsely chopped
  • 32 oz. chicken broth
  • 1 12 oz can condescend beef broth, undiluted
  • 1 c. sweet Madeira wine
  • 3-4 (or to taste) canned chipotle peppers in Adobo sauce, minced
  • 2 T. sugar or Splenda
  • Salt to taste

Directions
  1. Combine all ingredients in a large slow cooker. If there is too much liquid, remove some of the broth. Cook on low for 6 hours or until broth thickens and flavors meld. Or, cook for 1 hour on high, and 4 hours on low.

Wow, I like the ease of using pre-made meatballs -- and the chopotle in Adobo mixed with sweet Madeira with the herbs???? Must be dynamite! Thanks for posting this, Merlin!
