Great for holiday treat. The cream cheese mixed with the pumpkin filling makes a great Treat for anyone.

Ingredients
  • 3 eggs
  • 1 cup sugar
  • 1 teas. lemon juice
  • 2/3 cup pumpkin
  • 3/4 cup flour
  • 1 teas. cinnamon
  • 1 teas baking powder
  • 1/2 teas salt
  • 1/2 teas nutmeg
  • 1/2 teas ginger
  • 1 cup walnuts (optional)
  • 1 cup powdered sugar
  • 6 oz cream cheese
  • 4 teas margarine (soft)
  • 1/2 teas vanilla

Directions
  1. Beat 3 eggs 5min on high
  2. add 1 cup sugar
  3. 2/3 cup pumpkin
  4. 1 teas lemon juice
  5. In another bowl mix together 3/4 cup of flour
  6. 1 teas of the cinnnamon
  7. 1 teas baking powder
  8. 1/2 teas salt
  9. 1/2 teas nutmeg
  10. 1/2 teas ginger
  11. Fold pumpkin mixture
  12. Spread in greased, floured 15x10x1 pan. ( Lg cookie sheet I aslo use the parchment paper in the bottom of pan)
  13. top with 1 cup chopped walnuts.
  14. Bake 375 for 15 mins
  15. Turn on towel sprinkled with powdered sugar ( i use an old bed sheet) ROLL TOWEL AND CAKE TOGETHER. COOL unroll for the filing
  16. Filling 1 cup powdered sugar
  17. 6 oz cream cheese
  18. 4 teas margarine soft
  19. 1/2 teas vanilla
  20. Mix untill smooth
  21. spread on cake and reroll.
  22. ENJOY!
