Chicken Stew

This is a great stew for anytime. It ranks as a great comfort food.
Ingredients
- 3 to 4 chicken breasts shopping list
- 1 can Cream of corn shopping list
- 1 can diced tomatoes shopping list
- 1 Family Size can of cream of chicken soup shopping list
- small onion chopped shopping list
- salt and pepper to taste shopping list
How to make it
- Boil the chicken breasts. Keep the broth.
- Sautee the onion
- Add the soup, corn, onion and tomatoes (drained) to the reserved chicken broth
- Shred the boiled chicken and add it to the stew
- Add salt and pepper to taste and heat through on the stove top for about 20-30 minutes
- Easy to make ahead and reheat
- *Before serving...crumble a handful of saltine crackers into the stew if you like. I love it this way.
