How to make it

  • Boil the chicken breasts. Keep the broth.
  • Sautee the onion
  • Add the soup, corn, onion and tomatoes (drained) to the reserved chicken broth
  • Shred the boiled chicken and add it to the stew
  • Add salt and pepper to taste and heat through on the stove top for about 20-30 minutes
  • Easy to make ahead and reheat
  • *Before serving...crumble a handful of saltine crackers into the stew if you like. I love it this way.
