Zucchini And Corn Saute

- 1 tablespoon olive oil shopping list
- 3 cups (about 3 medium) zucchini, sliced shopping list
- 1/2 cup red onion, chopped shopping list
- 1/8 teaspoon (optional) red pepper, crushed shopping list
- 1 1/2 cups loose-pack frozen whole-kernel corn shopping list
- 1 cup (about 1 medium) seeded tomato, chopped shopping list
- 1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme, crushed shopping list
- salt and ground black pepper to taste shopping list
How to make it
- Heat olive oil in large skillet over medium-high heat. Add
- zucchini, onion, and crushed red pepper; cook, stirring
- occasionally, for 4 to 5 minutes or until vegetables are
- tender. Stir in corn, tomato, and thyme; cook, stirring
- occasionally, for 2 to 3 minutes or until heated through.
- Season with salt and pepper.
