Ingredients
  • 1 C. chicken stock
  • 2 Boneless chicken breast
  • Olive oil
  • 3 Cloves garlic, minced
  • ½ C. green pepper, chopped
  • ½ med onion, chopped
  • 1 can rotel tomatoes w/peppers
  • ½ C. Tequila
  • juice from two limes
  • Dash Cayenne pepper
  • Salt and pepper
  • 1 tsp Italian seasoning
  • ½ C. sliced olives
  • 8 oz noodles
  • Parmesan cheese
  • fresh basil or parsley, garnish

Directions
  1. Simmer the chicken breasts in the stock, until tender.
  2. Remove and cube.
  3. Set aside, reserving stock.
  4. Sauté the garlic, onion and green pepper in olive oil.
  5. Add tomatoes, tequila, juice and seasonings; simmer, covered ½ hour.
  6. Add chicken and olives and re-heat.
  7. If sauce becomes too thick, add the chicken stock.
  8. Toss with cooked noodles.
  9. Sprinkle with Parmesan cheese and garnish with fresh basil or parsley leaves.
