Versatile Chicken Hashbrown Caserole Recipe
This is a pretty simple casserole that would be good to bring for a pot-luck. Since the ingredients are pretty basic, you can easily think of many alterations. All measurements below are approximate.

Ingredients
  • 3 chicken breasts - cube or shredded
  • 1 (30 oz) bag of hash browns
  • 1 can cream of chicken soup
  • 1 c sour cream
  • 1 bag (8 oz) shredded cheddar (could mix with other like Gouda?)
  • 1 large onion - chopped
  • Minced Garlic, Parsley flakes, salt & Pepper, cayenne pepper to taste
  • 1/2 - 1 sleeve of Ritz crackers - crushed
  • Could possibly add chopped green peppers, green chilies, mushroom pieces, finely chopped broccoli (?), chopped ham or bacon for added flavor.

Directions
  1. Cook chicken (w/ S&P) with chopped onion until cooked through
  2. Chop or shred chicken
  3. Mix in bowl with all remaining ingredients, save Ritz
  4. Press into 9 x 13 casserole dish (un-greased was fine)
  5. Top with crushed crackers
  6. Bake uncovered @ 400 for 1 hour
  7. This dish, like most we make was good with a little hot sauce - we suggest just a little Green Tobasco or Frontera
