Strawberry Chicken Salad Recipe

Ingredients

1/2 cup mayonnaise

2 cups diced cooked chicken

2 tablespoons chopped chutney

1 cup sliced celery

1 teaspoon grated lime peel

1/4 cup chopped red onion

1 teaspoon salt

1-1/2 pints fresh strawberries

1 teaspoon curry powder

Lettuce leaves

1 tablespoon lime juice

Directions

Combine mayonnaise, chutney, lime peel, salt, curry powder and lime juice.

Add chicken, celery and onion then toss well.

Cover and chill then just before serving slice enough strawberries to make 2 cups.

Gently toss with chicken mixture.

Line platter or individual serving plates with lettuce then mound chicken salad in center.

Garnish with remaining whole strawberries.

Wow what an interesting combo - now I had heard of pineapples with chicken and even mango, lime, oranges - but strawberries?!? What a wonderful summer dish..it got me to thinking of creating the "very berry delicious" group to which this recipe now belongs! (hope you don't mind of course) Thanks chefmeow for a great interesting and unique taste on chicken salad dishes! and do tell more about that Darwin (as in the Darwin?) estate sale experience!
