Golden Potato Rolls

- 1 1/4 package active yeast shopping list
- 1/2 cup warm water shopping list
- 1 cup milk shopping list
- 3/4 cup shortening or butter or margarine shopping list
- 1 1/4 cups mashed potatoes shopping list
- 1/2 cup sugar shopping list
- 2 teaspoons salt shopping list
- 8-8 1/2 cups all purpose flour shopping list
- 2 eggs-beaten shopping list
- 1/2 cup butter-melted shopping list
How to make it
- Dissolve yeast in water. Set aside.
- In a saucepan,combine milk,shortening,and potatoes. Cook and stir over low heat until shortening is melted.
- Remove from heat and place in a large bowl with the sugar,salt,2 cups of flour,and the yeast mixture.
- Add eggs. Mix well.
- Cover loosely and let stand for 2 hours. Dough will be like a sponge.
- Stir in enough remaining flour to make a soft dough.
- Turn out onto a floured surface and knead until smooth and elastic(about 6 minutes).
- Place dough in a large greased bowl,turning once to grease the top.
- Cover and let rise in a warm place for 1 hour.
- Punch dough down and divide into thirds.
- On a floured surface,roll each portion into a 12" circle.
- Brush each circle with melted butter.
- Cut each circle into 12 wedges.
- Starting at the wide end,roll up each wedge.
- Place rolls point side down 2" apart onto greased cookie sheets.
- Brush addition butter over the rolls if desired.
- Cover and let rise for 30 minutes.
- Bake at 400 degrees for 15 minutes or until golden.
