How to make it

  • Procure a large, fine shad - clean it thoroughly, then fill it with the same kind of stuffing used for fowles.
  • Tie a string round it in order to keep it together, put it in your bake-pan, and baste it with butter, pepper and salt.
  • When well cooked (it will require about twenty minutes to bake), untie the string, and serve it upon a fish dish, with melted butter poured over

    this is a dish that is very popular here in the Hudson Valley... In the early spring there is a Shad Run up the river where they spawn...( Like a Salmon Run )

    My Grandmother and then my Aunts all made Stuffed Shad.. I will have to see if I have their recipe in my Aunt's box.. I think it was one that was just passed down, not written down.. thank you for a great recipe and wonderful memories.

    I had to look up 'shad' I'd never heard of it before!

    We really need to eat more fresh fish in our house. My eldest and my Hubby (a Chef) *love* all kinds of fish and seafood, the rest of us can take it or leave it.

    Simple and tasty recipe, I'll try it. Thanks.
