CORN RELISH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Buckley Estate in Garland, Texas in 1994.

Ingredients
  • 6 cups cooked fresh whole kernel corn
  • 3 cups chopped cabbage
  • 1 cup chopped onion
  • 1 medium green bell pepper chopped
  • 1 medium red bell pepper chopped
  • 4 cups distilled white vinegar
  • 2 cups granulated sugar
  • 1 cup water
  • 1 tablespoon pickling salt
  • 1 tablespoon celery seed
  • 1 tablespoon mustard seed
  • 1 tablespoon turmeric
  • 1 bay leaf

Directions
  1. Combine all ingredients in large sauce pot the bring to boil over medium heat.
  2. Stir occasionally then reduce heat to medium and cook 15 minutes stirring occasionally.
  3. Remove bay leaf then immediately fill hot pint jars with mixture leaving 1/2" head space.
  4. Carefully run a nonmetallic utensil down inside of jars to remove trapped air bubbles.
  5. Wipe jar tops and threads clean then adjust two piece caps.
  6. Process jars in boiling water canner for 15 minutes.

My grandmother used to make this and it was fantastic. It's too bad you don't see it anymore.
