Lyonnaise Potatoes Recipe

Ingredients
  • 4 medium potatoes
  • 1/3 C unsalted butter
  • 1 small onion, finely chopped
  • 1 Tbl finely chopped fresh parsley

Directions
  1. Pell and trim potatoes
  2. Thinly slice potatoes to 1/8 thickness by hand or with a mandoline
  3. Place slices in a bowl of cold water until ready to use
  4. Heat a heavy bottom saucepan over medium and melt half of the butter, add all of the onion and season well with salt and pepper
  5. Cook without browning until onion is soft and translucent, set onion aside
  6. Drain potato slices and pat dry
  7. Add the remaining butter to the pan
  8. When completely melted, sprinkle the potato slices over the bottom of the pan, then toss to mix until evenly coated
  9. Cook over medium heat, tossing regularly until the edges are golden and the slices are cooked through
  10. Return the onion to the pan, add the parsley and toss well.
  11. Adjust seasoning and serve
