Lyonnaise Potatoes

- 4 medium potatoes shopping list
- 1/3 C unsalted butter shopping list
- 1 small onion, finely chopped shopping list
- 1 Tbl finely chopped fresh parsley shopping list
How to make it
- Pell and trim potatoes
- Thinly slice potatoes to 1/8 thickness by hand or with a mandoline
- Place slices in a bowl of cold water until ready to use
- Heat a heavy bottom saucepan over medium and melt half of the butter, add all of the onion and season well with salt and pepper
- Cook without browning until onion is soft and translucent, set onion aside
- Drain potato slices and pat dry
- Add the remaining butter to the pan
- When completely melted, sprinkle the potato slices over the bottom of the pan, then toss to mix until evenly coated
- Cook over medium heat, tossing regularly until the edges are golden and the slices are cooked through
- Return the onion to the pan, add the parsley and toss well.
- Adjust seasoning and serve
