How to make it

  • Pell and trim potatoes
  • Thinly slice potatoes to 1/8 thickness by hand or with a mandoline
  • Place slices in a bowl of cold water until ready to use
  • Heat a heavy bottom saucepan over medium and melt half of the butter, add all of the onion and season well with salt and pepper
  • Cook without browning until onion is soft and translucent, set onion aside
  • Drain potato slices and pat dry
  • Add the remaining butter to the pan
  • When completely melted, sprinkle the potato slices over the bottom of the pan, then toss to mix until evenly coated
  • Cook over medium heat, tossing regularly until the edges are golden and the slices are cooked through
  • Return the onion to the pan, add the parsley and toss well.
  • Adjust seasoning and serve
