Beets With Orange Sauce Recipe

Ingredients

5 fresh medium-size Beets (about 1 1/4 lbs.)

6 C Water

1 Tbl. Vinegar

1 tsp. Salt

1 Tbl. Cornstarch

1 Tbl. Brown Sugar

1 tsp. grated Orange Peel

3/4 tsp. Salt

dash of Pepper

2/3 C Orange Juice

1/4 C Vinegar

Directions

Cut off all but 2 inches of beet root tops. Wash beets and leave whole with root ends attached. Place beets in a saucepan with water, vinegar (to preserve color) and salt. Bring to a boil. Reduce heat and simmer until beets are tender, 45 to 50 minutes adding more water if necessary.

Run cold water over beets; slip off skins and remove root ends. Slice, dice or cut into shoestrings.

In a saucepan, mix together cornstarch, brown sugar, grated orange peel, salt and pepper. Gradually stir in orange juice and vinegar. Cook, stirring constantly, until mixture thickens and boils. Boil for 1 minute, stirring. Stir in beets; heat through.
