Beets With Orange Sauce

- 5 fresh medium-size beets (about 1 1/4 lbs.) shopping list
- 6 C water shopping list
- 1 Tbl. vinegar shopping list
- 1 tsp. salt shopping list
- 1 Tbl. cornstarch shopping list
- 1 Tbl. brown sugar shopping list
- 1 tsp. grated orange peel shopping list
- 3/4 tsp. salt shopping list
- dash of pepper shopping list
- 2/3 C orange juice shopping list
- 1/4 C vinegar shopping list
How to make it
- Cut off all but 2 inches of beet root tops. Wash beets and leave whole with root ends attached. Place beets in a saucepan with water, vinegar (to preserve color) and salt. Bring to a boil. Reduce heat and simmer until beets are tender, 45 to 50 minutes adding more water if necessary.
- Run cold water over beets; slip off skins and remove root ends. Slice, dice or cut into shoestrings.
- In a saucepan, mix together cornstarch, brown sugar, grated orange peel, salt and pepper. Gradually stir in orange juice and vinegar. Cook, stirring constantly, until mixture thickens and boils. Boil for 1 minute, stirring. Stir in beets; heat through.

I love beets, too. Count me in on the high five for this recipe. Too bad, I live with a family of beet haters....ah, not really, it just means more for me!! Roasted, pickled, cold, hot, you name it, I'll try a beet anyway. Love the post.
