Ingredients

1½ oz. plus 1 tsp. of butter

2 cup of flour

2 tsp. baking powder

½ teaspoon salt

⅛ teaspoon cayenne pepper

¾ cup Cheddar cheese (grated)

⅝ cup of milk

Directions

Preheat the oven to 450°F.

Sift the flour, baking powder, salt and cayenne into a mixing bowl.

Add the butter, cut into small pieces.

Blend butter into flour mixture with your fingertips until the mixture resembles coarse bread crumbs.

With a table knife, stir in the cheese and milk to form a soft dough.

Form the dough into balls by hand.

Cut the dough in to 8 pieces and form each piece into a ½ inch thick circle.

Place the circles of dough, spaced well apart on a baking sheet.

Bake for 10 to 15 minutes or until they have risen and are golden brown.

Serve immediately.
