How to make it

  • 1. Place oregano, salt, garlic, olive oil, and lime juice in a large zip lock plastic bag. Shake the sealed bag until all of the ingredients are well mixed. Sample the marinade for tartness. If it is too tart, add more oil. If there is not enough zing, then add more lime. The salt and garlic flavors should also be noticeable. Place tenderloins in the bag with the marinade, seal, and turn to coat. Marinate for 2 to 5 hours in the refrigerator.
  • 2. Preheat grill to medium heat.
  • 3. Lightly oil the grill grate, and dispose of the marinade. Grill tenderloins for 20 to 30 minutes, only turning once, to desired doneness.
