Ingredients
  • cooked chicken (I use leftovers from roasted chicken)
  • mayo to taste
  • shallot
  • olive oil
  • capers

Directions
  1. cube the cooked chicken
  2. cook chopped shallot in olive oil until transluscent
  3. add capers and cook until capers are warm
  4. cool shallot caper mixture to room temp
  5. add to chicken with mayo to taste
  6. add salt and pepper
  7. for best taste let the salad sit overnight
