Whole Grain Cranberry Walnut Muffins Recipe
This tasty , sweet, tangy nutty muffin is our favorite Sunday morning treat. My husband is the one who makes these. Sunday mornings are just nicer when I can smell these baking all the way up the stairs.

Ingredients
  • 1 1/4 c. whole grain flour (we prefer Prairie Gold)
  • 3/4 c. Malt-O-Meal hot wheat cereal (dry)
  • 1/2 c. honey
  • 3/4 c. milk
  • 2 T. veg. oil
  • 1 egg
  • 1 T. baking powder
  • 1/2 t. salt
  • 1 t. vanilla
  • 3/4 c. chopped walnuts
  • 3/4 c. chopped cranberries
  • 1 t. chinese five spice powder

Directions
  1. Preheat oven to 400 degrees
  2. In a large bowl combine all ingredients
  3. Stir till moistened
  4. Fill greased muffin tins 3/4 full
  5. Bake 18 to 20 min. till done

Sounds great and delicious. I love the cranberry and walnut combo. Plus, I am intrigued by the additon of Chinese five-spice powder. I have it on hand and am ready to bake...ha! Anoter great post - thanks! =)
