Almost Wheat Free Waffles Recipe
Awesome waffles with real grain cereal and soy milk

Ingredients
  • 1/2 C Any wheat free 7 or 10 grain cereal
  • 1 C water
  • 1/2 C Graham flour
  • 1/2 C all purpose flour
  • 2 Tbsp canola oil
  • 2 Tbsp honey (I like white honey best)
  • 1/2 C soy milk
  • 1 egg or egg substitute
  • 1 tsp vanilla
  • 2 tsp baking powder
  • 1/2 tsp salt

Directions
  1. Place cereal and water in a microwaveable bowl and microwave for at least 3 minutes remove from oven, stir and let it cool. It will be thick but that's alright!
  2. In another bowl, add all other ingredients and the cooked cereal and stir.
  3. Let this rest a few minutes, in the meantime plug in your waffle iron and set the temp.
  4. Mine beeps at me when it is ready for batter.
  5. When iron is ready, spray it with cooking spray and add 1/3 cup of batter.
  6. When the light on the waffle iron goes out or starts beeping, the waffle is ready.
  7. Remove from iron and spread both sides with a little butter, add fresh fruit and enjoy!
  8. Today, these are the only waffles I make. When my son is home from college, I can never make enough!

I notice that these waffles have graham flour and all purpose flour.. both of which are made from wheat..
