Easy Red Velvet Cupcakes

- 1 package yellow cake mix (18.25 oz size) shopping list
- 2 tablespoons cocoa shopping list
- 5 large eggs shopping list
- 1/2 cup canola oil shopping list
- 1 cup buttermilk shopping list
- 2 (1 oz bottle) red liquid food coloring shopping list
- Cream Cheese Frosting: shopping list
- 1 (8oz) package cream cheese, softened shopping list
- 1/4 cup butter, softened shopping list
- 2 1/4 to 2 1/2 cups sifted powdered sugar shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Beat cake mix and next 5 ingredients at low speed with an elecric mixer 2 minutes.
- Spoon batter evenly into 24 paper or foiled lined muffin cups, filling 2/3 full.
- Bake accoding to package directions for cupcakes.
- Remove from pans immediately, and cool on wire racks.
- Spread cupcakes evenly with cream cheese frosting.
- Cream Cheese Frosting:
- Beat cream cheese and butter at medium speed with an electric mixer until creamy.
- Gradually add sugar, beating at low speed until smooth.
- Stir in vanlla until mixture is blended.
- 24 cupcakes and 2 cups frosting
