Ingredients
  • 4 eggs
  • 1/2 cup plain yogurt
  • 2 cups pumpkin or zucchini puree
  • 1 1/2 cups whole wheat flour + 1 1/2 cups oatbran (or substitute 3 cups flour)
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon all-spice
  • 1 teaspoon nutmeg
  • 1 cup crazins or raisins
  • 1 cup chopped nuts

Directions
  1. Mix together dry ingredients and wet ingredients separately, then mix together. Grease a 12 muffin tin and divide batter evenly between the cups. Bake at 400F for 25 - 30 minutes.
