How to make it

  • In a 4-5 quart pan, bring 8 C water to a boil over medium-high heat. Add broccoli and cook just until barely tender-crisp to bite (about 4 minutes). Drain, immerse in ice water until cool, and drain well again.
  • In a large bowl, stir together cornmeal, flour, and baking powder.
  • In a small bowl, beat cottage cheese, egg, egg whites, buttermilk, butter, and sugar until well blended.
  • Add cheese mixture to cornmeal mixture and stir just until dry ingredients are evenly moistened.
  • Pour batter into greased 8-inch round baking pan or quiche dish.
  • Gently press broccoli decoratively into batter.
  • Bake in a 350 oven until center feels firm when lightly pressed (about 30 minutes.)
  • Meanwhile, in a small bowl, stir together yogurt, vinegar, dill weed, honey, and cumin just until blended. Set aside.
  • Let kuchen cool slightly; then cut into wedges. Offer yogurt sauce to spoon over individual portions.

    Hmm..when I see "Kuchen" I'd think nuts and coffee glaze or cinnamon streusel lol but this might be one way to get me to eat my brocolli ;) Great idea even if I'm not enamoured of the little green critters *grin* Oh, wait a minute, it's "quiche like"? Well then, that changes EVERYTHING LMAO
