How to make it

  • In a large bowl, beat the butter, sugar, vanilla, ground fennel seed, and salt with an electric mixer until light and fluffy. Beat in the egg.
  • Add the flour and mix just until blended.
  • Transfer the dough to a sheet of plastic wrap and shape into an 8-inch log. Wrap the dough in plastic and refrigerate for 2 hours.
  • Preheat the oven to 350 degrees F. Line 2 heavy, large baking sheets with parchment paper. Cut the dough long crosswise into 1/8 or ¼ inch-thick slices. Transfer the cookies to the prepared baking sheets, spacing evenly apart.
  • Press the pine nuts decoratively atop the cookies (or sunflower seeds, or a combination). Bake until the cookies are golden around the edges, about 15 minutes.
  • The cookies are good to make the day ahead and the log of dough can be kept in the ice box, wrapped tightly, and used for another batch.

    Did you know that fennel is suppose too make you feel less hungury, so these could be called diet cookies! I am making these tonite! Cleaning carpets today so need to wait ubtil thats done... Thank you for the recipe.

    Fennel is my favorite seed, apart from anise, that is! :) And a touch of cinnamon empowers any dish. Thanks, gave it 5.
