This is great for a dinner party, buffet style ! The salmon can be served hot in the winter and cold in the summer, with one sauce or several This is a really tasty dish, and I made it served buffet-style for my husband's birthday party.

Ingredients
  • 1 quart water
  • ½ cup white wine
  • 1 small onion, quartered and sliced lengthwise
  • 1 teaspoon salt
  • 10 peppercorns
  • 4 (6-oz) salmon steaks
  • Cucumber-Lemon Sauce:
  • 1 large cucumber, peeled and seeded
  • salt
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1 teaspoon minced onion

Directions
  1. Combine water, wine, onion, salt and peppercorns
  2. in large skillet.
  3. Bring to boil.
  4. Add salmon steaks and return to boil.
  5. Reduce heat and simmer, covered, until salmon flakes
  6. easily when tested with fork, about 10 minutes.
  7. Remove steaks and drain.
  8. Serve with Cucumber-Lemon sauce.

  10. Cucumber-lemon Sauce:
  11. Shred cucumber and sprinkle lightly with salt.
  12. Let stand 30 minutes.
  13. Drain, squeezing to remove excess liquid.
  14. Place cucumber in bowl.
  15. Add mayonnaise, sour cream, lemon peel, lemon juice and onion and stir to blend.
  16. Taste and add more salt if needed.
  17. Makes 1 cup.
