Samosas

- 1 1/2 lbs boiling potatoes, peeled and boiled until tender shopping list
- 1/4 c very finely chopped sweet onion shopping list
- 1/2 fresh serrano chile, very finely chopped shopping list
- 1 1/2 Tbsp very finely chopped fresh cilantro shopping list
- 1 tsp salt shopping list
- 1/2 tsp cayenne pepper shopping list
- 1/2 tsp garam masala shopping list
- 1/4 tsp cumin seeds shopping list
- juice of 1/2 lemon or lime shopping list
- 1/4 c butter (optional) shopping list
- 1 lb package frozen puff pastry, thawed shopping list
- 1 egg, whisked shopping list
How to make it
- Coarsely mash the potatoes with the onion, chile, cilantro, salt, spices, lemon or lime juice, and butter and mix well. Leave as lumpy as you'd like.
- Lay the thawed sheets of puff pastry on a lightly floured work surface. Cut the sheets into thirds along the lines of the folds. Cut each third in half crosswise, which will leave you with 12 rectangles. Roll each rectangle out lightly to form a square. Cut each square in half diagonally, which will leave you with 24 triangles.
- One at a time, brush around the edges of each triangle with the whisked egg. Spoon a generous tablespoon of filling in the center of each triangle. Grab two points of the triangle and pull upwards and seal edges together. Then pull the third point upwards and seal the seams. Fold the point at the top over. Your samosa will look a little bit like a doughy Peep.
- Preheat oven to 400.
- Arrange assembled samosas in a greased baking dish, spray lightly with olive or canola oil, and bake until crisp...about 20 minutes.

Fantastic - seriously lovely vegetarian samosas - perfect for my all Indian night tonight. Oh and just for the non-US cooks out there that don't know Cilantro = Corriander. Congratulations on a great recipe.
