Ingredients
  • 1/2 cup very fine bulgur
  • 2 bunches parsley
  • 2 medium tomatoes, finely chopped
  • 1 small onion, thoroughly minced
  • 1 teaspoon salt
  • 1 teaspoon dry mint
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Suggested by fellow-foodie rml add chopped garlic- thank you rml

Directions
  1. Soak bulgur in enough fresh water for about 15 minutes.
  2. Drain well.
  3. Toss all ingredients in a large cooking bowl and add oil last.
  4. Chill the mixture in the refrigerator.
  5. Serve the mouthwatering dish decorated with lettuce leaves.

Made this...it's excellent. I added chopped garlic to it.


This is different but I bet its good.


This recipe is perfect for summer time tomatoes and fresh mint which are abundant at this time.
