Puff Burritos

- 1 lb. ground beef shopping list
- 1 med onion, chopped shopping list
- 1 bell pepper chopped shopping list
- 2 cloves garlic, minced shopping list
- 3 jalapenos, seeded and chopped shopping list
- 1 pkg. taco seasoning Mix shopping list
- water shopping list
- 3 tomatoes, chopped or 1 can shopping list
- 1 pkg. puff pastry sheets (2 sheets) shopping list
- 1 can refried beans shopping list
- 1 cup shredded cheddar cheese (4 ounces) shopping list
- 1 can sliced olives shopping list
- 2 eggs shopping list
- 2 T. water shopping list
How to make it
- Thaw the pastry sheets at room temperature for 40 min or until they're easy to handle.
- Meanwhile cook the beef in skillet over med-high heat until it's well browned, stirring frequently to break up the meat, drain grease.
- Add onion, peppers and garlic, cook until veggies are tender.
- Add taco seasoning, water and tomatoes (if using canned, do not add water) and cook according to the package directions. Cool completely.
- Heat oven to 400°F.
- Spray 2 baking sheets with cooking spray.
- Stir eggs and water with a fork in a small bowl.
- Unfold 1 pastry sheet on a lightly floured surface.
- Roll the sheet into a 14” square.
- Cut into 4 squares.
- Repeat with the remaining pastry sheet.
- Spread each square with refried beans, leaving about 1 ½” around edge bare.
- Place meat mixture down the center of each square.
- Top with olives and cheese.
- Brush the edges of the pastry with egg.
- Fold one side over top, fold ends over and bring other side over and seal.
- Place seam down on baking sheets.
- Brush with the egg mixture.
- Bake for 20 min or until golden.
- Serve with sour cream, guacamole and salsa.
