Vegetarian Chili with Neat Ingredients

- 2 T. canola oil shopping list
- 1 large onion chopped shopping list
- 6 garlic cloves, chopped shopping list
- 1 28 oz. plus 1 15 oz cans diced tomatoes shopping list
- 2/3 cup strong coffee shopping list
- 2/3 cup beer shopping list
- 1/3 cup maple syrup shopping list
- 2 heaping T. chili powder (more or less to taste) shopping list
- 1 t. cumin powder shopping list
- 1 T. unsweetened cocoa powder shopping list
- 1 t. dried oregano shopping list
- 1/2 t. cayenne (red) pepper shopping list
- 3/4 t. ground coriander shopping list
- a few pinches of red pepper flakes (to taste) shopping list
- 3 15 oz. cans assorted beans, drained (e.g., butter, kidney, pinto) shopping list
- salt and black pepper to taste shopping list
- optional garnishes: grated cheddar, chopped green onion, sour cream shopping list
- if you're adventurous: chocolate chips shopping list
How to make it
- saute onions and garlic in heated oil over medium heat until soft (if you want to add meat of any kind, you can saute it now)
- stir in all the ingredients.
- Cover pot, reduce heat to low, and simmer for 45 minutes. Adjust the seasoning to taste, and simmer another half hour or more.
