  • Sauce:
  • 1 tablespoon vegetable oil
  • 2 bunches green onions, chopped
  • 2 cups chopped white onions
  • 8 large garlic cloves, minced
  • 2 cups (packed) golden brown sugar
  • 1 cup ketchup
  • 1 cup tomato paste (about 9 ounces)
  • 1 cup whole grain Dijon mustard
  • 1 cup water
  • ½ cup Worcestershire sauce
  • ½ cup apple cider vinegar
  • ½ cup apple juice
  • 1 large dried ancho chili, stemmed, seeded
  • and cut into small pieces
  • 1 tablespoon ground cumin
  • 1 ½ cups bourbon
  • ****
  • Spice Rub and Ribs
  • 2 tablespoons ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon dry mustard
  • 1 tablespoon coarse salt
  • 1 ½ teaspoons cayenne pepper
  • 1 ½ teaspoons ground cardamom
  • 1 ½ teaspoons ground cinnamon
  • 6 pounds baby back pork ribs
  • (about 3 whole racks)

Directions
  1. Directions for sauce:
  2. Heat oil in heavy large pot over medium-low heat.
  3. Add green onions, white onions and garlic and
  4. sauté until tender, about 15 minutes.
  5. Mix in all remaining ingredients, adding bourbon last.
  6. Simmer sauce until thick and reduced to 7 cups, stirring
  7. occasionally, about 1 hour.
  8. Season to taste with salt and pepper. (Sauce can be prepared 2 weeks ahead. ( Cover and refrigerate.)

  10. Directions for spice rub and ribs:
  11. Mix all ingredients except ribs in medium bowl.
  12. Rub spice mixture over both sides of rib racks.
  13. Arrange ribs on large baking sheet.
  14. Cover and refrigerate overnight.
  15. Prepare barbecue (medium heat).
  16. Cut rib racks into 4-to 6-rib sections.
  17. Arrange ribs on barbecue.
  18. Grill until meat is tender, occasionally turning ribs
  19. with tongs, about 40 minutes.
  20. Using tongs, transfer ribs to work surface.
  21. Cut rib sections between bones into individual ribs.
  22. Arrange on clean baking sheet.
  23. Transfer 3 cups sauce to small bowl.
  24. Place remaining sauce in small saucepan and reserve.
  25. Brush ribs with sauce from bowl.
  26. Return ribs to barbecue.
  27. Place pan of reserved sauce at edge of barbecue to rewarm.
  28. Grill ribs until brown and crisp on edges, brushing with more sauce from bowl and turning occasionally, about 10 minutes.
  29. Serve ribs with warm sauce.

I'm preparing the rub tonight, connor, and grilling the ribs tomorrow - I haven't made ribs at home for years because I'm always so disappointed in the flavor and tenderness...however, your recipe has inspired me to try again, so wish me luck! The rub and sauce sounds absolutely wonderful!!


Oh my, oh my - you will love these people! Fantastic rub, and to-die-for sauce (I could just eat it with a spoon!)...thank you, connor, for posting this - I FINALLY made ribs I could be proud of (but getting that membrane off took me FOREVER - I obviously need a lot more practice, because it HAS to be easier and faster than the way I did it...if you have any hints, please let me know). Stellar recipe - very, very delicious!
