How to make it

  • Prepare black bean and rice mixture according to package directions
  • Cut the tops off the peppers and carefully clean out cores and seeds
  • Fill peppers with bean and rice mixture and stand filled peppers in baking dish
  • Top each filled pepper with shredded cheese
  • Bake covered at 350 F for 45 minutes, longer for softer peppers.
