Ingredients
  • 1 cut up chicken
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 large russet potatoes peeled and cut into 6 pieces each
  • 7 large garlic cloves peeled
  • 1/2 teaspoon dried crushed red pepper(can add more if you like it hotter)
  • 1/2 cup chicken broth
  • 1 cup frozen green peas thawed
  • chopped fresh parsley( optional)

Directions
  1. Preheat oven to 450.
  2. Sprinkle chicken with salt and pepper
  3. sprinkle oregano and garlic powder over chicken , set aside
  4. Heat oil in large ovenproof pot over high heat
  5. Add potatoes and saute until golden brown(about 5-6 minutes)
  6. Transfer potatoes to bowl
  7. Add chicken to same pot and saute until golden brown on all sides(about 10 minutes)
  8. Add garlic cloves and crushed red pepper and saute 2 minutes
  9. Return potatoes to pot
  10. Add chicken broth and bring to boil
  11. Cover pot tightly and transfer to oven and bake until chicken is cooked through(about 30 minutes)
  12. Add peas to pot and cover and bake 5 more minutes
  13. Transfer chicken to platter
  14. Arrange potatoes and peas around chicken
  15. Pour sauce from pot over chicken
  16. Garnish with chopped parsley if desired and serve!!
  17. ENJOY!!!!
