Smoked Duck Sausage

- 1 lb. duck meat, coarsely ground shopping list
- 1/3 lb. duck meat, small dice shopping list
- 1/3 lb. fatback shopping list
- 1 egg shopping list
- 1 oz. brandy shopping list
- 2 tsp. dry mustard shopping list
- 1 garlic clove, pared, minced shopping list
- 2 tsp. red peppercorns, cracked shopping list
- coriander seeds, crushed, to taste shopping list
- salt and pepper, to taste shopping list
- sausage casings, as needed shopping list
How to make it
- Place all ingredients except casings in mixing bowl; combine using paddle. Refrigerate until chilled. Grind through medium die; pipe into casings. Hot smoke using desired wood to internal temperature of 140 degrees F. Refrigerate until chilled.
