Pan-seared Scallops Recipe

Ingredients
  • 2 Tbl butter
  • 1/2 red bell pepper, cut into 1/2 inch strips
  • 1 small yellow (summer) squash, cut into bite size pieces
  • 12 sea scallops, patted dry
  • 1 garlic clove, crushed
  • 2/3 Cup bottled clam juice
  • 2 Tbl fresh lemon juice

Directions
  1. Melt the butter in a 10 inch skillet over medium high heat
  2. Saute garlic,peppers and squash until just tender, remove to warm plate and place in warm oven
  3. Season scallops with salt and pepper
  4. Add scallops to skillet and saute until opaque and golden, about 3 minutes per side
  5. Add peppers and squash and toss
  6. Gently transfer to plates and keep warm
  7. Add clam and lemon juices to skillet and bring to a boil, deglazing the skillet
  8. Sauce will thicken slightly (about 4 minutes)
  9. Drizzle sauce over scallops and serve

This looks so good! I absolutely love scallops, but here in the midwest it's terribly hard to find any decent ones.


I've got this one bookmarked for this weekend. The family is going to be gone to AZ for the weekend. And the scallops are on sale this week...Woooohooooo!!! And I can even have wine with it. :)
