How to make it

  • To make the pastry combine all of the ingredients and with a knife break up the butter. Add ice cold water quickly to get it into a campact ball without being too fussy in ensuring all the butter is rubbed in properly. NB-water has to be very cold when adding to bind. Speed and efficiency is key here. Once you have a block of pastry -leave to sit in a fridge for min two hours.
  • remove and grease a baking tray or dish-roll out the pastry so that it is even and not too thick.few mil is good
  • To make the filling simply whisk together all the ingredients except the vegetables/one cup of cheese until fluffy. Add the par cooked veg to the pastry lined tray and then add in the quiche mixture . Sprinke over the last cup of cheese, salt and pepper.
  • Pre heat oven to 180 deg C and let it cook here for 40 mins or unti browning.

    this does sound fantastic. me thinks i could do it up gluten free with brown rice flour...i'll report back on that.
