Valentines Day Scallops Mornay Recipe
Being single, I invite friends over for Valentine's Day and make it a celebration of friendship. This is the entree for this year (after I triple the recipe!) I hope you enjoy!

Ingredients
  • 12ounces fresh sea scallops
  • 3/4 cup water
  • 1/2 cup dry white wine
  • 1/2 teaspoon salt
  • dash ground white pepper
  • 1/2 cup fresh mushrooms, sliced
  • 2 tablespoons sweet onion, finely chopped
  • 1 tablespoon butter
  • 4 teaspons all-purpose flour
  • 1/3 cup half and half
  • 1/4 cup Swiss cheese, shredded
  • 2 tablespoons fresh parsley, minced
  • hot cooked white rice

Directions
  1. In a saucepan, combine water, wine, salt and pepper. Bring to a boil.
  2. Add scallops and mushrooms. Return to a boil.
  3. Cover and simmer 1 to 2 minutes. Remove scallops and mushrooms and set aside.
  4. Boil liquid, uncovered, until reduced to 1/2 cup, about 10 to 15 minutes.
  5. In second saucepan, melt butter. Add onion and saute until softened. Stir in flour. Cook until bubbly.
  6. Add reduced scallop liquid and half and half.
  7. Cook, stirring, until thickened and bubbly. Stir in cheese until melted. Remove from heat. Season to taste with additional salt and pepper.
  8. Fold in scallops and mushrooms.
  9. Spoon into a large baking dish to individual baking dishes.
  10. Bake at 375 degrees for 15 to 20 minutes or until heated through.
  11. Sprinkle with parsley.
  12. Serve with hot cooked rice.
