How to make it

  • Preheat oven to 350
  • butter the sides and bottom of a 10" springform pan
  • Heat oil in a large pot over mde-high heat
  • Add onion, garlic, squash and peppers
  • Saute, stirring frequently until crisp-tender, about 10- 15 minutes
  • Whisk cream and eggs together in a large bowl while veggies are cooking
  • Whisk in saffron, basil, salt and pepper
  • Crumble boursin into pieces and add to mixture
  • Stir in the lobster and veggies
  • Add the Gruyere and stir well
  • Pour into prepared pan
  • Bake until just firm throughout, 45 - 60 minutes
  • Cool 10 minutes and cut into wedges
  • Serve hot
