Lobster Frittata

- 3 T olive oil shopping list
- 1 meduim red onion. sliced thin shopping list
- 2 cloves garlic, minced shopping list
- 3 summer squash, 1/4" slice shopping list
- 13 bell peppers (assorted colors) seeded and cut in 1/4" strips shopping list
- 6 lg eggs shopping list
- 1/4 C heavy cream shopping list
- 1 tsp saffron threads shopping list
- 3 T fresh basil, chopped shopping list
- salt and pepper to taste shopping list
- 2 - 5oz pkgs boursin cheese shopping list
- 1 lb lobsted, cooked cut into bite-sized chunks shopping list
- 2 C grated gruyere cheese shopping list
How to make it
- Preheat oven to 350
- butter the sides and bottom of a 10" springform pan
- Heat oil in a large pot over mde-high heat
- Add onion, garlic, squash and peppers
- Saute, stirring frequently until crisp-tender, about 10- 15 minutes
- Whisk cream and eggs together in a large bowl while veggies are cooking
- Whisk in saffron, basil, salt and pepper
- Crumble boursin into pieces and add to mixture
- Stir in the lobster and veggies
- Add the Gruyere and stir well
- Pour into prepared pan
- Bake until just firm throughout, 45 - 60 minutes
- Cool 10 minutes and cut into wedges
- Serve hot
