Ingredients
  • 3 T olive oil
  • 1 meduim red onion. sliced thin
  • 2 cloves garlic, minced
  • 3 summer squash, 1/4" slice
  • 13 bell peppers (assorted colors) seeded and cut in 1/4" strips
  • 6 lg eggs
  • 1/4 C heavy cream
  • 1 tsp saffron threads
  • 3 T fresh basil, chopped
  • salt and pepper to taste
  • 2 - 5oz pkgs boursin cheese
  • 1 lb lobsted, cooked cut into bite-sized chunks
  • 2 C grated Gruyere cheese

Directions
  1. Preheat oven to 350
  2. butter the sides and bottom of a 10" springform pan
  3. Heat oil in a large pot over mde-high heat
  4. Add onion, garlic, squash and peppers
  5. Saute, stirring frequently until crisp-tender, about 10- 15 minutes
  6. Whisk cream and eggs together in a large bowl while veggies are cooking
  7. Whisk in saffron, basil, salt and pepper
  8. Crumble boursin into pieces and add to mixture
  9. Stir in the lobster and veggies
  10. Add the Gruyere and stir well
  11. Pour into prepared pan
  12. Bake until just firm throughout, 45 - 60 minutes
  13. Cool 10 minutes and cut into wedges
  14. Serve hot
