Caesar Salad With Cilantro And Green Chile Dressing Recipe
You can always tell the most frequently used recipes in my file box by the number of stains on my file cards! This recipe is from the 1997 Ortega Family Cookbook...and it’s very tasty!

Ingredients
  • Dressing:
  • 1 cup cilantro (about 1 bunch)
  • ¾ cup mayonnaise
  • ¾ cup vegetable oil or herb flavored oil
  • ½ cup diced green chilies, well drained
  • ¼ cup red wine vinegar
  • ¼ cup pepitas (pumpkin seeds), toasted*
  • ¼ cup crumbled feta cheese
  • 1 clove garlic, crushed
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • Salad:
  • 1 large head of romaine or Red Romaine lettuce
  • 1 ½ cups seasoned croutons
  • ½ cup whole green chilies, well drained, cut into strips
  • ½ cup feta cheese
  • ½ cup pepitas, toasted.

Directions
  1. Dressing Directions:
  2. Blend all ingredients in food processor or blender until coarsely
  3. chopped.
  4. Chill for 1 hour for flavors to deepen.
  5. May store up to one week in the refrigerator-glass container recommended.
  6. Salad Directions:
  7. Mix salad ingredients together and toss with dressing.
  8. *To toast pepitas, place in a dry frying pan over medium heat
  9. and stir gently until lightly browned.
