Garlicky Carrots With Basil Recipe

Ingredients
  • 1 pound carrots (I prefer a bag of peeled, organic baby carrots)
  • 1 tsp extra virgin olive oil (not evoo LOL!)
  • 2-4 cloves minced garlic
  • 1/4 cup minced fresh basil
  • 1 tsp lemon juice (from a REAL lemon - no faux foodies here I hope!)
  • ground black pepper to taste

Directions
  1. Fill a large, heavy pot or saucepan with about an inch of water.
  2. Cover and bring to a boil.
  3. Place carrots in a large steamer basket and place over boiling water.
  4. Cover and steam until tender, 4 to 5 minutes.
  5. Remove the carrots and pat dry.
  6. Heat oil in a large frying pan over medium-high heat.
  7. Add carrots, garlic, basil and lemon juice.
  8. Sauté until cooked through and fragrant, about 3 minutes.
  9. Sprinkle with pepper.
  10. Serve at room temperature or very slightly chilled.
