Garlicky Carrots With Basil

- 1 pound carrots (I prefer a bag of peeled, organic baby carrots) shopping list
- 1 tsp extra virgin olive oil (not evoo LOL!) shopping list
- 2-4 cloves minced garlic shopping list
- 1/4 cup minced fresh basil shopping list
- 1 tsp lemon juice (from a REAL lemon - no faux foodies here I hope!) shopping list
- ground black pepper to taste shopping list
How to make it
- Fill a large, heavy pot or saucepan with about an inch of water.
- Cover and bring to a boil.
- Place carrots in a large steamer basket and place over boiling water.
- Cover and steam until tender, 4 to 5 minutes.
- Remove the carrots and pat dry.
- Heat oil in a large frying pan over medium-high heat.
- Add carrots, garlic, basil and lemon juice.
- Sauté until cooked through and fragrant, about 3 minutes.
- Sprinkle with pepper.
- Serve at room temperature or very slightly chilled.
