Shrimp Etouffee From Emerils Real And Rustic Cookbook Recipe

Ingredients
  • 1 1/2 sticks butter
  • 4 cups chopped onion
  • 2 cups chopped bell pepper
  • 2 cups chopped celery
  • 2 tsp chopped garlic
  • 2 lobs medium shrimp, pealled an deveined
  • 2 tsp salt
  • 1/2 tsp cayenne
  • 2 Tbsp flour
  • 2 cups water
  • 6 Tbsp chapped parsley
  • 1/2 cup chopped green onion

Directions
  1. Melt the butter in a large skillet over medium heat.
  2. Add onion, bell pepper, and celery and saute until soft and tender, about 10 minutes.
  3. Add the garlic and cook for 2 minutes.
  4. Add shrimp, salt and cayenne and cook for about 4 minutes or until the shrimp turns pink.
  5. Dissolve the flour in the water and add to the shrimp mixture.
  6. Stir until the mixture thickens slightly.
  7. Reduce heat to medium-low and simmer for 6 to 8 minutes, stirring occcasionally.
  8. Add the parsley and green onion.
  9. Stir and cook for 2 minutes more.
  10. Serve right away.

EMERIL MAKES IT BASICALLY LIKE WE ALL DO DOWN HERE.. I ADD A CAN OF TOMATO SAUCE INTO MINE TO GIVE IT THE ORANGE LOOK.. AND I SAUTEE MY GREEN ONIONS AND PARSLEY WITH ALL THE OTHER VEGS.. NICE POST! WANTED TO SHARE WITH YOU HOW I DO IT..


I have this same book and its how I started to learn how to cook Cajun food. Its very good. I have made several of the recipes in it and they all turned out very good.
