How to make it

  • Melt the butter in a large skillet over medium heat.
  • Add onion, bell pepper, and celery and saute until soft and tender, about 10 minutes.
  • Add the garlic and cook for 2 minutes.
  • Add shrimp, salt and cayenne and cook for about 4 minutes or until the shrimp turns pink.
  • Dissolve the flour in the water and add to the shrimp mixture.
  • Stir until the mixture thickens slightly.
  • Reduce heat to medium-low and simmer for 6 to 8 minutes, stirring occcasionally.
  • Add the parsley and green onion.
  • Stir and cook for 2 minutes more.
  • Serve right away.

    I have this same book and its how I started to learn how to cook Cajun food. Its very good. I have made several of the recipes in it and they all turned out very good.

    EMERIL MAKES IT BASICALLY LIKE WE ALL DO DOWN HERE.. I ADD A CAN OF TOMATO SAUCE INTO MINE TO GIVE IT THE ORANGE LOOK.. AND I SAUTEE MY GREEN ONIONS AND PARSLEY WITH ALL THE OTHER VEGS.. NICE POST! WANTED TO SHARE WITH YOU HOW I DO IT..
