Spicy Orange Lamb Stir Fry Recipe
SPICY ORANGE LAMB STIR FRY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mundey Estate in Haley Texas in 1992.

Ingredients
  • 1 pound lamb cutlets
  • 1/4 cup water
  • 3 tablespoons dry sherry
  • 2 tablespoons soy sauce
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon crushed red pepper
  • 2 teaspoons cornstarch
  • Vegetable cooking spray
  • 1 teaspoon vegetable oil
  • 8 ounce can drained water chestnuts
  • 1 medium sweet red pepper seeded and cubed
  • 4 green onions cut into 1" pieces
  • 1 tablespoon grated orange rind
  • 1 teaspoon fresh gingerroot minced
  • 2 cups hot cooked rice cooked without salt or fat

Directions
  1. Trim fat from cutlets then cut into thin strips and set aside.
  2. Combine next five ingredients in a large bowl.
  3. Add cutlet strips then cover and let stand 20 minutes.
  4. Drain strips reserving marinade.
  5. Combine marinade with cornstarch then stir until smooth and set aside.
  6. Coat a wok or skillet with cooking spray then add oil.
  7. Heat to medium high then add strips and stir fry 5 minutes.
  8. Remove strips and set aside.
  9. Add water chestnuts and next four ingredients to wok and stir fry 1 minute.
  10. Add reserved marinade then cook stirring constantly until thickened.
  11. Serve over rice.
