Spicy Orange Lamb Stir Fry

- 1 pound lamb cutlets shopping list
- 1/4 cup water shopping list
- 3 tablespoons dry sherry shopping list
- 2 tablespoons soy sauce shopping list
- 1 teaspoon granulated sugar shopping list
- 1/2 teaspoon crushed red pepper shopping list
- 2 teaspoons cornstarch shopping list
- vegetable cooking spray shopping list
- 1 teaspoon vegetable oil shopping list
- 8 ounce can drained water chestnuts shopping list
- 1 medium sweet red pepper seeded and cubed shopping list
- 4 green onions cut into 1" pieces shopping list
- 1 tablespoon grated orange rind shopping list
- 1 teaspoon fresh gingerroot minced shopping list
- 2 cups hot cooked rice cooked without salt or fat shopping list
How to make it
- Trim fat from cutlets then cut into thin strips and set aside.
- Combine next five ingredients in a large bowl.
- Add cutlet strips then cover and let stand 20 minutes.
- Drain strips reserving marinade.
- Combine marinade with cornstarch then stir until smooth and set aside.
- Coat a wok or skillet with cooking spray then add oil.
- Heat to medium high then add strips and stir fry 5 minutes.
- Remove strips and set aside.
- Add water chestnuts and next four ingredients to wok and stir fry 1 minute.
- Add reserved marinade then cook stirring constantly until thickened.
- Serve over rice.
