Ingredients
  • 1 lbs Boneless, skinless turkey breast strips.
  • ½ C. Onion, chopped
  • ½ C. red bell pepper
  • 2 cloves Garlic, minced
  • 1 pkg. taco seasoning
  • Fresh ground pepper
  • 2 T. EVOO
  • ½ C. Ripe Olives, wedges, drained
  • 1 C. Tomato puree
  • 2 T. Chipotle in adobo sauce, chopped
  • 3 C. cooked brown rice
  • 12-10" flour tortillas
  • 3 C. Iceburg lettuce, shredded
  • 8 oz shredded cheese
  • OPTIONAL TOPPINGS
  • Fresh chopped onion
  • Diced tomato
  • Salsa
  • Sour cream

Directions
  1. Sauté turkey and next 5 ingredients in oil until turkey is lightly browned.
  2. Stir in olives, tomato puree and chipotles.
  3. Cover and simmer 10 min.
  4. Top each tortilla with rice, turkey mixture, lettuce and optional toppings if using. Roll up tortilla.
