Blueberry Corn Muffins Recipe
Easy and delicious corn muffins with fruit and nuts. Great for a snack or as a side at breakfast, lunch or dinner.

Ingredients
  • 1½ cups flour
  • ½ cup whole wheat flour
  • ½ cup cornmeal
  • ¾ cup sugar
  • 2½ teaspoons baking powder
  • ½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup buttermilk
  • ½ cup orange juice
  • ¼ cup butter, melted
  • 1 egg, beaten
  • 1 Tablespoon grated orange peel
  • 2 cups fresh blueberries

Directions
  1. In large bowl, combine flours, cornmeal, sugar, baking powder, baking soda and salt.
  2. In small bowl, combine buttermilk, orange juice, butter, egg and peel; add to flour mixture and mix only until moist.
  3. Stir in blueberries.
  4. Spoon into prepared muffin cups.
  5. Bake at 400ºF 20 to 25 minutes or until wooden pick inserted near center comes out clean.
  6. Makes 18 muffins.
