Blueberry Corn Muffins

- 1½ cups flour shopping list
- ½ cup whole wheat flour shopping list
- ½ cup cornmeal shopping list
- ¾ cup sugar shopping list
- 2½ teaspoons baking powder shopping list
- ½ teaspoons baking soda shopping list
- ½ teaspoon salt shopping list
- ½ cup buttermilk shopping list
- ½ cup orange juice shopping list
- ¼ cup butter, melted shopping list
- 1 egg, beaten shopping list
- 1 Tablespoon grated orange peel shopping list
- 2 cups fresh blueberries shopping list
How to make it
- In large bowl, combine flours, cornmeal, sugar, baking powder, baking soda and salt.
- In small bowl, combine buttermilk, orange juice, butter, egg and peel; add to flour mixture and mix only until moist.
- Stir in blueberries.
- Spoon into prepared muffin cups.
- Bake at 400ºF 20 to 25 minutes or until wooden pick inserted near center comes out clean.
- Makes 18 muffins.
