“Kuay Jub” is practically a bowl of noodle that make with intestine in a darker soup than usual Thai noodle soup.

Ingredients
  • 1 lb of pork
  • 1 lb pork’s intestine
  • 6 boil eggs peeled
  • 1 1/2 cup fried tofu medium cubed
  • 1/2 cup green onion thinly sliced
  • 1/2 cup cilantro leaves chopped
  • 1/2 cup cilantro root
  • 1 lb fresh big noodle cut in big cubed ( can be find in any Asian Market)
  • 1 cups soy sauce (to taste)
  • 1 teaspoon of salt (to taste)
  • 4 tablespoon five spices
  • 1 cup or more thick soy sauce (for a dark color)
  • 1 cup fried garlic mix in oil
  • 5 garlic gloves
  • 1 gallon water
  • 2 stalk celery cut into stick

Directions
  1. In a medium size bowl, soak noodle in a hot sink water for about 10 minutes for tender. Removed and drained.
  2. In a large pot, add water, five spices, thick soy sauce, celery stick, cilantro root, and garlic. Bring to boil.
  3. When boil, add pork and intestine, cook for 1 hour or more until tender.
  4. Add soy sauce and fish sauce to taste
  5. Bring pork and intesine, cut into thinly slice, placed in a bowl and set aside.
  6. Add boiled egg into broth and continue cooking for egg to change color when done cut egg into half or four pieces and set aside.
  7. Before serving, place noodle into serving bowl top with pork, intestine, fried tofu, boiled egg and pour soup broth into bowl. Sprinkle with cilantro, green onion, fried garlic before serving.
  8. In Thailand, soup are usually have a side condiments, sliced hot pepper in vinegar, sugar, hot dried chili and fish sauce for more taste as desire...

Watson, I love your recipes, but can I leave out the pork guts?


THANK YOU! thank you for this recipe. Totally authentic, tasted mind blowing. If you can Jennifer try it with the pork guts. Seriously you go into a another world!..I would also recommend using the side condiments if you don't have time to prepare try squeezing some lime juice and dried chilli flakes or any bottle of chilli sauce. It greatly enhances the flavour.
