Rhubarb Chutney

- 2 lb. rhubarb shopping list
- ½ lb. onions, chopped shopping list
- 3 cups ( 1½ lbs.) soft brown sugar shopping list
- 1½ cups golden raisins shopping list
- 2½ cups vinegar shopping list
- 1 teaspoon ground mixed spice (apple pie or pumpkin pie spice) shopping list
- 1½ tablespoons dry mustard shopping list
- ½ teaspoon ground pepper shopping list
- 1 teaspoon ground ginger shopping list
- 1 teaspoon salt shopping list
- 1/8 teaspoon cayenne pepper shopping list
How to make it
- Wash rhubarb and cut into chunks, draining any remaining water.
- Chop onions.
- Put all ingredients into a pan, simmer and stir will.
- Simmer for 1 hour or until mixture is golden brown and thick.
- Put chutney into hot, sterilized jars, cover and seal according to canning instructions.
