Delicious chutney that is good smeared as a side with a meal or just by itself on bread, as a snack.

Ingredients
  • 2 lb. rhubarb
  • ½ lb. onions, chopped
  • 3 cups ( 1½ lbs.) soft brown sugar
  • 1½ cups golden raisins
  • 2½ cups vinegar
  • 1 teaspoon ground mixed spice (apple pie or pumpkin pie spice)
  • 1½ tablespoons dry mustard
  • ½ teaspoon ground pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/8 teaspoon Cayenne pepper

Directions
  1. Wash rhubarb and cut into chunks, draining any remaining water.
  2. Chop onions.
  3. Put all ingredients into a pan, simmer and stir will.
  4. Simmer for 1 hour or until mixture is golden brown and thick.
  5. Put chutney into hot, sterilized jars, cover and seal according to canning instructions.
