I love preparing fish this way and any solid fish will do. Serve with hushpuppies and a fresh mixed green salad. MmmMmm

Ingredients
  • 3 Tablespoons all-purpose flour
  • 1/2 - 1 tsp. cayenne pepper
  • 1 16 oz. pkg. fresh or frozen flounder fillets. (Thaw frozen fillets)
  • *I have used cat fish and haddock as well.
  • 1/3 cup cornmeal
  • 3/4 cup seasoned dried bread crumbs
  • 1 Tbsp. parsley flakes
  • 1 egg
  • 1/2 cup cooking oil
  • Tartar sauce or Horseradish seafood sauce

Directions
  1. In a bowl or on a sheet of waxed paper, place flour blended with cayenne pepper.
  2. In pie plate, with fork, beat egg with 1 Tablespoon water.
  3. In another bowl or on another sheet of waxed paper, combine cornmeal, seasoned bread crumbs and parsley flakes.
  4. Dip fillets in flour, then egg mixture, then cornmeal mixture until coated.
  5. In 12 inch deep skillet over medium heat, in hot oil, fry fillets only turning once.
  6. Cook for about 8-10 minutes or until fish flakes when fork tested.
  7. Serve with tartar sauce or Horseradish seafood sauce.
  8. Makes 3 or 4 servings
