Great new twist on stuffed eggs. I always get compliments when I bring these.

Ingredients
  • 1 package (9oz.) creamed spinach
  • 12 hard-cooked eggs
  • 1/3 cup grated parmasean cheese (or 1/3 instant potato flakes)
  • 1/2 cup mayonnaise
  • 1 TAB. Dijon mustard
  • 5 bacon slices, cooked crisp and crumbled
  • 3 green onions minced
  • paprika

Directions
  1. Peel eggs and cut lenthwise.
  2. Remove yolks to bowl
  3. Mash yolks, parmasean (or potato flakes) with a fork
  4. Stir in creamed spinach, mayonnaise and next 3 ingredients
  5. Stuff egg whites generously with yolk mixture
  6. Sprinkle with paprika if desired
  7. Chill
