Ingredients
  • 1 lg. eggplant cut in medium size bite
  • 1 lb. ground pork (less fat)
  • 1 clove garlic, chopped finely
  • 2 tbsp. olive oil
  • 1 pinch black pepper
  • 3 tbsp. oyster sauce
  • 1 tbsp. sugar
  • 3 tbsp. fish sauce or salt (to taste)
  • 3/4 cup spring onion chopped

Directions
  1. In large skillet, take 2 tablespoons of olive oil and garlic, saute lightly.
  2. Add pork, cook though until done, stir rapidly to break down meat.
  3. Add eggplant, oyster sauce, sugar, fish sauce, and pepper. Bring heat to medium high, stir rapidly, then cover.
  4. Cook until eggplant is soft. When doen, arrange eggplant on serving plate and sprinkle with chopped spring onion and it ready to serve..Best serve over rice. Enjoy!!!

I found this recipe by accident, and glad I did! I'm looking for different ways to prepare eggplant and this certainly is one! What a good idea!
I'm expecting to have lots of eggplant this year from our garden and will need recipes that aren't the same-0 same-o. I'm sure we will enjoy this very much!
